ROASTED TOMATILLO AND PINEAPPLE SALSA

 

1 pound tomatillos, peeled
1 onion, peeled and quartered
1 jalapeno
8oz can pineapple chunks
3 cloves garlic

Roast tomatillos, onion and jalapeno on a sheet pan at 375º for 30-40 minutes.  Combine roasted vegetables, pineapple and garlic in a food processor and pulse until desired consistency.
