STEAMED ARTICHOKES

2-4 artichokes
1 lemon, sliced
2 tablespoons garlic, minced

Rinse down into the leaves of each artichoke well to remove any dirt and/or bugs.
trim stems from each artichoke.
Add lemon slices and garlic to the bottom of a large stock pot.  Place a steamer basket in pot and position artichokes in the basket with the stems facing up.
Add enough water to the pot so that it is just above the bottom of the basket.  Cover pot and bring to a boil, once boiling lower to simmer and steam artichokes for 30-40 minutes.
Poke the center of the stems with a fork and if it goes in easily they are done.  The larger the artichoke the longer it will take.
Enjoy your artichoke by dipping the inner part of the leaves into a sauce of your choice and scraping the meat on the end of the leaf into your mouth with your teeth.
Cut around the bristles of the flower and remove all of them before enjoying the heart.
We also enjoy roasted artichokes but I prefer this method since it's quicker.
