RUMCAKE

 



1 box yellow cake mix
3.4oz instant vanilla pudding
4 eggs
1/2 cup vegetable oil
3/4 cup dark rum (I prefer Malibu)
1/4 cup water

glaze
1 stick butter
1 cup sugar
1/4 cup water
1/2 cup dark rum (I prefer Malibu)

Preheat oven to 325º
mix all cake ingredients together until well combined.  Pour into a greased bundt pan.  This is the one I used  HERE  it's my favorite bundt pan! Bake for 50 minutes. 

Prepare glaze.  Combine butter, sugar and water in a sauce pan.  Bring to a boil and stir constantly until sugar is melted.  Remove from heat and allow to cool a bit before stirring in rum.

Stab the bottom of the cake (still in the pan) several times with a skewer or fork and pour most of glaze over the bottom of the cake, reserving a couple tablespoons.   Allow to sit in pan for an hour or two.  Invert on a plate and drizzle remaining glaze over top.
