BANANA BREAD

 

*1 box yellow/spice cake mix (just the mix, do not include additional ingredients)
4-6 ripe bananas
1/2 cup chocolate chips
1/2 cup chopped nuts, if desired
*don't have cake mix?  use the dry ingredients for cake mix

beat cake mix and bananas until well combined  
stir in chocolate chips and nuts or any other desired mix ins
bake at 350º for 50 or 60 minutes in a loaf pan
bake for about 16-20 minutes if making muffins

instead of chocolate chips and nuts, you can get creative with your mix ins, chop up some snickers, Twix, peanut butter cups or pretzels!  my daughter, Peyton, loves blueberries mixed in hers.
When I bake these as muffins I like topping them with cream cheese frosting.  Muffins just seem to last longer!

8oz cream cheese 
1 stick butter, softened 
1 teaspoon vanilla 
pinch of salt
2 cups powdered sugar 
Beat cream cheese, butter, vanilla and salt until creamy, slowly add in sugar.

This has been my go to banana bread for years but it was still dryer than I think banana bread should be.  I prefer the recipe above but this one is also good.

3 ripe bananas
2 eggs
1 3/4 flour
1 1/2 cups sugar
1/2 cup vegetable oil
1/4 cup milk
1 teaspoon baking soda
1 teaspoon vanilla
1/2 cup chocolate chips, optional
1/2 cup walnuts or pecans, optional

combine all ingredients until mixed well.  Split between to loaf pans and bake at 325º for 50 minutes or until golden brown.
