PRIME RIB

9lb boneless prime rib roast 1 stick butter, softened 8 cloves garlic, chopped 1/4 cup fresh rosemary, chopped 2tbs dried thyme 1/4 cup whole grain mustard Salt and pepper 24 hours prior to cooking, combine butter, garlic, rosemary, thyme, and mustard. Liberally salt and pepper all sides of roast and then coat all sides with mixture. Refrigerate until 3 hours prior to cooking. 
Preheat oven to 500. Place room temp roast on rack in roasting pan. Roast at 500 for 15 min. Reduce temp to 325 and continue to roast until thermometer measures 135 degrees. Remove from oven and allow to rest for 20 minutes before carving.

Serve with horseradish ranch dipping sauce!
