1 cup water
1 cup sugar
Using a knife, peel strips of lemon peel away from your lemon. Use that knife or a spoon to try and scrape as much of the white pith off of the inside of the peel. Cut the peel into 1/2" strips. *You can use a julienne peeler instead of the steps above, you will just get a lot thinner strips.
Place strips in a small sauce pan, cover with 1" of water and bring to a boil. Allow to boil for 15 minutes. Once done pour peels into a strainer and discard water.
Bring 1 cup of water and 1 cup sugar to a boil, add lemon peel to this simple syrup mixture and allow to boil for 40 minutes.
Pull peels out with a fork and lay over a cooling rack to dry. Once dry, sprinkle with additional sugar.
*If you would like to use multiple citrus then double the simple syrup.
