Our family went strawberry picking yesterday so I've been googling looking for yummy recipes to make. This morning I threw some fresh cut up strawberries in some pancakes and found this AMAZING strawberry syrup recipe online. It is so delicious and easy, a definitely must try!!!
Pancakes
2 cups pancake mix
1 1/2 cups milk
1 cup diced strawberries (fresh or frozen-thawed)
4 oz cream cheese
Fresh Strawberry Syrup
3 cups diced strawberries
1 cup sugar
2 tablespoons lemon juice
1/2 teaspoon vanilla extract
Mix all ingredients for strawberry syrup in a saucepan, bring to a boil, lower heat to a simmer and simmer for 15 minutes.
While syrup is cooking, mix pancake mix, milk and 1 cup of diced strawberries together in a bowl. Make pancakes - I use a 1/2 cup scoop and it makes about a dozen or more smaller pancakes.
When pancakes are done heat cream cheese in microwave for about 20 seconds to soften to make it easier to spread. Spread a layer of cream cheese on each pancake.
When syrup is done remove from heat and as it cools it'll thicken. Put a spoonful of syrup on top of cream cheese and layer however many pancakes you want!
