Boil potatoes until fork tender. Takes about 30 minutes.

Oil a baking sheet. Place hot potatoes on sheet, leaving plenty of space between them. Use something with a flat surface like a glass or bowl and smash the potatoes until they are flat like a cookie, but still hold together. Drizzle olive oil or dressing on top and sprinkle on your favorite seasoning, garlic salt and parmesan cheese.
Bake in a 450 degree oven for 15-30 minutes or until they are crispy and starting to brown. Time will depend on how flat you smushed your potatoes.
*If you smash too hard and the potatoes fall apart, mold back together with your fingers. The flatter you smash the potatoes the crispier they'll get while cooking.
