Red or baking potatoes cut into chunks (leave small red ones whole)
olive oil, Italian salad dressing or melted butter
garlic salt or montreal steak seasoning
herb seasoning (we use rosemary or Italian)
parmesan cheese
Boil potatoes until fork tender. Takes about 30 minutes.

Oil a baking sheet. Place hot potatoes on sheet, leaving plenty of space between them. Use something with a flat surface like a glass or bowl and smash the potatoes until they are flat like a cookie, but still hold together. Brush oil or butter on top and sprinkle on your favorite seasoning, garlic salt and parmesan cheese.
Bake in a 450 degree oven for 20-30 minutes or until they are crispy and starting to brown. Time will depend on how flat you smashed your potatoes.
*If you smash too hard and the potatoes fall apart, mold back together with your fingers. The flatter you smash the potatoes the crispier they'll get while cooking.
