NACHOS





bag of tortilla chips
can refried black beans
1lb (4 cups) cups shredded colby jack cheese
can black beans
1 cup pico de gallo
1-2 lbs your choice of meat (our favorite is sweet and smokey chicken)
pickled jalapeƱos
toppings such as sour cream, guacamole and salsa 

Spray a metal cooking sheet with pam and spread out tortilla chips.  Spread each chip with refried beans.  I used a spoon and slid it onto the scoops.
Sprinkle half cheese all over chips.
Evenly place black beans, pico de gallo and meat over chips.
Sprinkle with remaining cheese.
Add jalapeƱos, if desired.
Bake at 400* for 15 minutes and serve with toppings.

*Sweet and Smokey chicken
Place 1-2 lbs boneless skinless chicken thighs in a pot with 1 teaspoon liquid smoke and 1/2 cup brown sugar.
Cook on low for about and hour.
Shred and use in above recipe.
