This rice was delicious and we especially loved it paired with fish tacos!  For the recipe below I used 3 cups of uncooked jasmine rice.

Jasmine rice
1 lime, juiced
1 teaspoon salt
1/2 cup fresh cilantro, chopped
3 tablespoons extra virgin olive oil

Prepare rice as directed on package for desired amount, *I used 3 cups uncooked if you use more or less you may need to adjust the measurements of the other ingredients.

Once rice is done, transfer to a large bowl and add lime juice, salt, cilantro and olive oil.  Stir until well combined and serve!
