LOADED BAKED POTATO & CHICKEN CASSEROLE


2 lbs chicken breasts, cut into 1" chunks
8-10 medium potatoes, cut into 1/2" chunks
1/3 cup olive oil
1 1/2 teaspoons salt
1 teaspoon pepper
1 tablespoon paprika
2 tablespoons garlic powder
6 tablespoons hot sauce
toppings:
2 cups fiesta blend cheese
1 cup crumbled cooked bacon
1 cup diced green onion

Preheat onion to 500*.  Spray 9x13 pan with cooking spray.
In a large bowl mix together olive oil, salt, pepper, paprika, garlic powder and hot sauce.  Add potatoes and stir to coat.  Scoop potatoes into pan with slotted spoon.
Bake potatoes for 45 minutes, stirring every 10.
Add chicken to sauce mixture and stir to coat.  Once potatoes are done lower oven temp to 400*, top potatoes with chicken and toppings.  Bake for 15 minutes.
