1 small onion
1 jalapeno
1/2 cup fresh cilantro (I use half of the bundle you get from the store)
2 tbsp fresh lemon juice (my husband prefers lime)
3/4 tsp salt
1 pint cherry or grape tomatoes

Pulse all ingredients except tomatoes in a food processor (manual or electric) just until chopped up - not pureed. Then add tomatoes, depending on the size of your food processor you may have to add half the tomatoes and then the other half.

If you don't have a food processor, dice all ingredients with a knife

As far as I know there is no way to tell how hot a jalapeno is going to be. Sometimes putting a whole one in is very hot and other times you can't taste heat at all. If you are sensitive to heat I would put a section of the jalapeno in at a time and keep tasting and adding more sections until it's how you like it.
