PISTACHIO SALMON



4 salmon fillets
1 tablespoon butter, melted
1/4 teaspoon red pepper
1/4 cup finely chopped pistachios
1 tablespoon grated parmesan cheese

1. Brush salmon with butter and sprinkle with red pepper. Cover with pistachios and parmesan cheese.

2. Bake for 15 - 20 minutes at 400 degrees.

* Use chicken breasts instead of salmon and bake at 350 for about 45 minutes.
