HOT CRASH POTATOES





Red potatoes (as many as you want to eat)
olive oil
garlic salt
herb seasoning (we use rosemary)
parmesan cheese, if desired

Boil potatoes until fork tender.  Takes about 30 minutes.

Oil a baking sheet. Place hot potatoes on sheet, leaving plenty of space between them.  Use something with a flat surface like a glass or bowl and smash the potatoes until they are flat like a cookie, but still hold together. Drizzle olive oil on top and sprinkle on your favorite herb and garlic salt.

Bake in a 450 degree oven for 30 minutes or until they are crispy and starting to brown.

*If you smash too hard and the potatoes fall apart, mold back together with your fingers.  The flatter you smash the potatoes the crispier they'll get while cooking.
